Huevos Rancheros, which translated from Spanish means, “Rancher’s Eggs”, is a traditional Mexican dish that’s typically eaten at breakfast. This colorful and tasty dish features fried eggs sitting over a corn tortilla and topped with lots and lots of warm homemade salsa. My mom used to make this dish all the time when I was growing up and it quickly became one of my favorite desayunos.
